6 Weeks to Summer Recipe 4: BBQ Chicken Flat Bread

Again I’ll share another INCREDIBLE lunch or light dinner option from my fave nutritionist Mark MacDonald.  Author of the powerful book, Body Confidence, Mark shares the science behind blood sugar stabilization and makes sense of how to eat balance meals that are simple, delicious and affordable.  Nutrition shouldn’t make you crazy, it shouldn’t be so far off the family menu, and it shouldn’t stress you out.

Try this simple recipe, directly from the Venice Nutrition website:

Ingredients:

  • 1 whole wheat tortilla (approx. 6″ round tortilla)
  • Non-Fat Cooking Spray
  • 2 Tbsp. tomato sauce or pizza sauce
  • 1/3 cup sharp cheddar cheese, divided
  • 2 ½ oz. cooked, boneless, skinless chicken breast, cut into small chunks or shredded*
  • 1 Tbsp. your favorite BBQ sauce
  • 1/8 cup thinly sliced onion (optional)
  • 1/8 cup thinly sliced bell pepper (optional)

Preparation:

  1. Preheat oven to 450 degrees
  2. Place whole wheat tortilla on a cookie sheet and spray the tortilla lightly with Pam Cooking Spray
  3. Spread tomato or pizza sauce on top
  4. Sprinkle half of the cheddar cheese on top of sauce
  5. In a small bowl, combine the chicken and barbeque sauce and layer on top of cheese
  6. Sprinkle onions, peppers and remaining cheese on top of pizza
  7. Cook for approximately 8-10 minutes or until crust is crisp and cheese is melted
  8. Allow to cool slightly, cut into quarters and enjoy!
